Raw Crystallized Honey vs. Liquid Honey

Raw Crystallized Honey

  • Preserves Nutrients: Retains more natural enzymes, antioxidants, and pollen due to minimal processing.
  • Texture: Spreadable, creamy consistency ideal for toast, baking, or toppings.
  • Longer Shelf Life: Crystallization slows degradation, maintaining quality over time.
  • Lower Water Content: Less prone to fermentation, enhancing stability.
  • Natural State: Containing beneficial trace elements.
  • Dissolves Easily: A spoon of honey readily dissolves in tea or warm water.
  • Easily re-liquified: See notes below.
  • Authenticity: Less likely to be adulterated or mixed with syrups, ensuring purity.

Liquid Honey

  • Note: Raw honey may be liquid at certain ambient temperatures, and may appear transparent. It may also crystallize while in the jar.
  • Store Bought: Commercial honey is generally pasturized, reducing nutritional content and extending shelf life.
  • Clarity: Visually appealing for commercial products or gifting (subjective, though)
  • Wider Availability: More common in stores, often pasteurized for consistency and shelf appeal.

Notes

Raw Crystallized Honey: May lose some benefits if heated excessively, as heat can degrade enzymes and antioxidants.
To re-liquify crystallized honey without damaging nutritional value and enzymes, keep temperatures below 104°F (40°C). Place the honey container in warm water up to 104°F and stir gently, avoiding direct heat, and never microwave.

Liquid Honey: Pasteurization (common in commercial liquid honey) may reduce nutritional content and is done by commercial honey producers to extend shelf life and prevent crystallization.

We have witnessed the incredible difference having honey bees around makes on our local fauna.
